Thai Style Green Curry with Coconut and Basil


Absolutely delicious and very easy to prepare!
This is a SPICY and sweet sauce-adjust seasonings to your family’s tastes!
Use with vegetarian or meat stir fries-excellent over basmati rice.

1 bunch cilantro, ends trimmed and washed
2 c. packed fresh basil, thin stems OK
1/2 c. fresh ginger, peeled and roughly chopped
1 fresh jalapeno or other spicy chili, de stemmed and roughly chopped, or to taste
1 to 2 cloves garlic
juice and zest of 1 lime (buy 2 and add more juice to taste if desired)
1 can coconut milk, lite or regular --unsweetened!


In food processor, puree all but coconut milk, scraping sides as needed to form uniform paste.
Slowly pour in coconut milk through feed tube until sauce is desired consistency and flavor.
