Spicy Thai Peanut Sauce

1/3 c. peanut butter (crunchy is best!)
1 c. coconut milk, Thai Kitchen Low Fat
canned
dash rice vinegar
tamari or Bragg’s Liquid Aminos to taste
( a few tablespoons)
2 or 3 tbsp. chopped fresh cilantro
2 tsp. lime zest
1 1/2 tsp. fresh minced ginger
crushed red chilies or fresh minced hot
chilies, 1 tsp. or to taste
Whisk together ingredients, adjust
seasonings.
