Skillet Barbequed Tofu Lettuce Wraps
The crisp and cool lettuce leaves wrapped
around spicy BBQ tofu triangles is a perfect
combination for a hot day on a picnic, or in the
middle of winter. Delicious with tofu hot, room
temperature or chilled, straight out of the fridge.
2 pkgs. extra firm regular tofu
¼ c. olive or other quality cooking oil
salt and pepper
barbeque sauce, your favorite bottled or try the
following EXCELLENT recipe
lettuce leaves, washed and left whole, red or
green leaf, bibb, etc.
Heat large cast iron or non-stick pan with oil over
medium high heat. Slice block of tofu into 3 equal
slabs lengthwise, hold together in block shape.
Halve then quarter sliced block, then cut each
quarter into triangles. Pat dry. Sauté in flat single
layer for 7 to 10 minutes on one side before
moving or turning. Turn tofu to brown on other
side. Lower heat to medium low and slowly pour
BBQ sauce over. Gently simmer for 20 minutes
or so, turning tofu and covering with sauce.
Serve hot or cold inside several lettuce leaves.

The BEST BBQ Sauce:
whisk together 1 c. organic ketchup (I like Muir
Glen), ½ c. water, 1/3 c. blackstrap molasses
and 2 tbsp. or to taste pureed chipotle peppers.
