Poppy Seed Dressing
Makes about 1 ½ cups. Perfect with the Fresh Fennel and Cabbage Slaw, and
Braised Fennel, Date and Red Leaf Lettuce Salad, Chapter Three, Earth.
1 egg
1/8 c. honey or brown rice syrup
1/2 tbsp. Dijon-style mustard
1/3 c. red wine vinegar
1 1/2 tbsp. minced onion
1 c. canola or safflower oil
1 1/2 tsp. poppy seeds
Process first five ingredients in processor for a minute. Add oil in thin stream,
transfer to bowl and stir in poppy seeds. May be made without egg.
