Oktoberfest Spiced Red Cabbage and Apples
Perfect with veggie brats and mustard!
1/2 red cabbage, thinly sliced
2 red apples, sliced
1 onion, halved and sliced-- or 1 leek, sliced into rounds
quality margarine for saute
1/2 tsp. each allspice, cloves, nutmeg, ginger
2 bay leaves, lots of black pepper, and salt to taste
1 c. cider or apple juice
1 tbsp. cider vinegar if desired for extra tang
Saute onion or leek until beginning to soften, add apples
and seasonings, stirring to evenly saute. Add cabbage
and cider, blend thoroughly, cover and simmer until tender.
