Hot Maple Bacon Dressing

Create a classic spinach salad, with tomatoes, thinly sliced red
onions and wedges of hard boiled egg, accompanied by a
delicious vegetarian dressing. Nestle
Iowa Corn Fritters,
Chapter Four, Within, alongside the salad for a light meal.
Makes about 2 cups.

8 slices veggie bacon, cut into 1/4 inch pieces
1 c. diced red onion
3/4 c. red wine vinegar
3/4 c. maple syrup
coarsely ground black pepper, pinch dried thyme
3 tbsp. olive oil

In frying pan, sauté bacon in olive oil until crisp.  Remove from
pan and set aside. In same pan, sauté onion until just
beginning to brown. Pour in vinegar and maple syrup,
whisking constantly. Add seasonings. Just before serving,
add bacon, stir, and ladle over spinach salads.
