Honeydew Melon with Fresh Mint
In the heat of summer, this simple salad is perfect, refreshing.
1 ripe honeydew
1 c. minced fresh mint
Cut each end off melon. Stand on end and cut rind from the sides of the melon,
following the curves, all the way around. Discard rind and cut melon in half.
Scoop out seeds. Cut slices of melon, then into chunks. Place in a bowl and
toss with mint. Chill before serving.
