Rosemary Balsamic Vinegar Grilled Tofu and Portabella Mushrooms
                                        with Mustard Braised Spinach

The flavors here will create a plate of ecstasy for you and your guests! You may communicate
with simply a series of mmmmms through the main course. Serve this dish with oven roasted
new potatoes scattered around the tofu on its’ bed of spinach with the grilled mushrooms.
Serves 4

1 to 1 1/2 lb, tofu, cut into 8 slices
4 to 8 portabella mushrooms, allowing either 1 or 2 per guest depending on size
balsamic vinegar for marinade
olive oil for marinade
minced garlic cloves for marinade
4 rosemary stems, leaves stripped from bottom 2 inches and minced
salt and freshly ground pepper

2 bunches fresh spinach
1 small onion, finely diced
olive oil for saute
2 or 3 heaping tbsp. stone ground mustard

Marinate tofu steaks and mushrooms in 3 parts vinegar to 1 part olive oil, garlic, rosemary, salt
and pepper to taste. Amounts of vinegar and oil will depend on marinating dish, use as shallow
as possible to fit everything in. Marinate at least a half hour.
Fire up the grill. Spray grilling rack with oil. Place tofu on hottest part of grill and arrange
mushrooms around the outside.

While grilling, prepare spinach inside.
Wash and spin spinach leaves. Saute onion in a little oil until lightly browned over medium high
heat, stirring occasionally. Add spinach leaves, reduce heat to low and cover for 2 or 3 minutes.
Remove lid and stir in mustard. Taste and add a little salt and pepper if you like. Set aside and
keep covered while tofu and mushrooms are finishing.

Divide spinach between plates, placing in the center and making a hollow or”nest” in the
middle. Place a tofu steaks in the nest, add the one or two mushrooms on top but slightly off
center and spear with rosemary branches. Scatter 3 to 4 roasted new potatoes around the
steaks if you like. ( Roast new potatoes tossed with olive oil, salt, pepper, minced garlic and
onion in a 425 degree oven for 40 to 50 minutes. Exceptionally pretty if you can take the time to
carve potatoes into mushroom shapes.)
