Pink Grapefruit Avocado Salsa
Beautiful colors in this fresh and unusual salsa.... wonderfully paired with hot black beans and
rice, or the flavoring for Black and White Bean Coconut Salad, Chapter Three, Earth.
2 large pink grapefruit and 1 tbsp. grapefruit zest
2 large avocados, cut into small dice
1 tbsp. fresh hot chili, minced, or to taste
1/3 c. minced fresh chives
1/3 c. chopped fresh cilantro
Zest the grapefruit peel. Cut peels from grapefruit, then cut fruit into small dice, removing seeds,
and place in bowl with juice. Add remaining ingredients, then taste for spiciness
