Fry Bread
Serve hot with flavored honey, see Chapter Two, Air, or with shredded
cheese and Tomatillo Green Apple Salsa, Chapter Three, Earth.
2 quarts oil
2 c. unbleached wheat flour
1 1/2 tbsp. baking powder
1/2 tsp. salt
1 1/4 to 1/2 c. warm water
Heat oil in large, deep heavy pot. Whisk flour, baking powder and salt in
bowl. Add warm water gradually and knead dough until soft but not sticky.
Add more flour or water if necessary. Cover and let dough rest for 15
minutes. Pull off large egg sized balls of dough, and roll into rounds about
1/4 inch thick. Punch hole in center of each round, then pierce several
times with a fork. This will allow fry bread to puff. Fry rounds until bubbles
appear on dough- and bread is a light golden color. Turn over, frying
second side. Lift and place on cloth covered platter.
