Elva’s Sauce for Noodles
One of the most eagerly awaited meals while staying with our Cotopaxi friends in Ecuador was this one. Everyone
visiting was invited into the big kitchen at the center to watch and assist Elva cooking the meal. One woman, whose
energy was not up and at similar vibration to the others was gently asked to leave, to go rest. The rest of us had a
happy time smelling, stirring, and taking notes.
2 1/2 c. sliced red onion
1/3 c. olive oil
1/2 c. finely chopped garlic
Sauté, stirring clockwise in the pan.
The clockwise motion brings in more positive opening energy.
1/3 c. flour--when onion is a bit browned, stir to thicken.
1 1/2 c. water
1/8 c. approximately soy sauce
Stir to make thickened sauce.
1/4 c. more garlic
1 tbsp. ground cumin
1/2 tbsp. salt
1 c. chopped fresh basil
Stir these into sauce. At this point, add whatever blanched fresh vegetables you like to the sauce. Simmer a few
minutes and serve over noodles with freshly grated queso ranchero on top.
Spinach, zucchini, and tomatoes is a delicious combination of vegetables.
