Curried Winter Squash with Confetti Dried Fruit, Nuts and Seeds
Easy and delicious!

1 large winter squash—halve, seed, peel and chop into large bite sized pieces,( or
use baked spaghetti squash and scoop out, separating “strings”)
1/3 – 1/2 c. quality margarine or butter
1 tbsp. or to taste Indian masala or curry powder
2 c. mixed fruit such as dried cranberries, chopped dried apricots or papaya, currants
1 1/2 c. nuts and/or seeds such as toasted pumpkin seeds, cashews
½ c. toasted coconut
salt and freshly ground pepper

Preheat oven to 375. Brush baking pan with oil. Put squash pieces on pan, turn to
lightly coat with oil. Roast 25 minutes or until fork tender. In large bowl, toss with
margarine, masala or curry powder, fruit, nuts and coconut, season with salt and
pepper. Serve hot!
