Curried “Chicken” Seitan Salad

Try this delightful, interesting salad on a picnic or patio lunch! Seitan is made from wheat gluten-- the
most nutritional part of the wheat kernel, and is 15-18% protein!

1 pkg. White Wave Seitan, “chicken” style, drained, finely chopped
1 c. finely diced celery
2 c. fresh snow peas, cut on diagonal into 1/2 inch pieces
1 c. chopped toasted almonds
1 c. raisins

For dressing:

1 c. coconut milk
1 1/2 - 2 tsp. curry powder
1/4 tsp. sambal oelek (Indonesian red curry paste--or crushed red chili flakes)
2 tbsp. minced chives or scallions
a little salt or tamari to taste

Mix salad ingredients in bowl. Mix dressing ingredients in separate bowl, taste and adjust seasonings if
desired and stir into salad. Chill to allow flavors to blend. Serve on rolls or on a bed of spinach greens.
