Black and White Bean Coconut Salad with Pink Grapefruit Avocado Salsa

Beautiful colors in a fresh and unusual salsa.... wonderfully paired in this bean salad with the
surprise treat of coconut. Try the salsa with grilled tofu or salmon tacos, refried bean or shrimp
tostadas.

Salad:
1 can black beans, rinsed and drained
1 can white beans (canneloni or northern), rinsed and drained
3 to 4 good sized handfuls mixed salad greens
1/2 c. coconut milk or to taste
1 c. large flake coconut, toasted

In large bowl, toss together salad ingredients, then fold in salsa. Serve with hot cornbread and a
pitcher of hibiscus tea!
