Beta Ginger Fruit Salad
Vitamin C, beta carotene and licorice are three dietary sources for allergy relief. The orange and grapefruit peel,
not just zest, is included for taste and for the bioflavonoids, which are also important allergy fighters. Papaya
contains the digestive enzyme papain, which helps the body digest protein, and all orange foods are said in
Chinese medicine to be beneficial seasonal foods. Ginger is a wonderful aid to the immune system. Eating the
honey which is created in your area is said to be a good allergy relief as well--by eating the transformed nectar of
the local plants, it has a strengthening affect for your system.
1 cantaloupe, peeled, seeded and chopped
4 oranges, peeled with a knife, peels reserved
1 or 2 pink grapefruits, peeled with a knife, peels reserved
1 papaya, peeled, seeded and chopped
1 tsp. anise seed, crushed
2 tbsp. fresh ginger
1/3 c. honey
Place diced cantaloupe in large bowl. Cut citrus fruits into pieces. Thinly slice up to 4 tbsp. peels, including some
of the white pith. Add oranges, grapefruit and papaya, then remaining ingredients. Let sit, refrigerated and
covered awhile to let flavors develop.
