Beautiful Pizza
The crust is chewy and wonderful, open to variation.
Try the Marinara Sauce, Chapter Three, Earth-- simple
and loaded with fresh herbs and garlic. Topping
combinations are wide as the sky! Take the opportunity
to show your dining companions a delicious alternative to
nitrites, cholesterol and saturated fats. Leave it cheese-less
and still be satisfied, or try one of the great soy cheeses,
if you’re looking for no animal products.
1/2 c. plus 4 tbsp. warm water
1/2 tbsp. honey
1/2 tbsp. baking yeast
2 or more c. unbleached flour
1/4 c. cornmeal or semolina
1/4 c. shredded parmesan, if desired, or add 1/4 c. more flour
1 tsp. salt
1 1/2 tbsp. olive oil


Place 4 tbsp. warm water, honey and yeast in bowl
and stir to dissolve. Let stand until foamy, about 6
minutes. Add 1 c. flour, cornmeal, parmesan and
salt, then gradually pour in remainder of warm
water and the oil. Beat until smooth. Stir in last cup
of flour, and knead until dough is smooth and
elastic, several minutes, adding more flour if
sticky. Grease dough all over with small amount of
oil, place in bowl, cover with damp towel and let
rise until doubled in a warm place, about one
hour. Preheat oven to 450.
Punch dough down and form into pizza crust.
Place on pizza pan dusted with cornmeal or
semolina, and allow to rise about 15 minutes. Par-
bake crust until lightly golden, about 10-12
minutes. Pull from oven and top with sauce and
toppings, then bake off for about 15 more
minutes, until cheese is bubbly and you just can’t
wait any longer!!
Toppings: Try sauteed veggie pepperoni (St. Ives
brand), Gimme Lean meatless sausage, onion,
mushrooms, artichoke hearts, olives, roast
peppers, pestos, cheese.
