Apricot Chipotle Barbeque Sauce
This sauce is excellent for homemade baked beans,
or with tempeh BBQ on a toasted roll. Makes about
a quart, keeps very well refrigerated.
1/2 c. sliced onion
1/2 c. sliced green pepper
4 cloves minced garlic
1/2 to 2/3 c. molasses
1 small can tomato paste
1 28 oz. can diced ground tomatoes in puree
1/2 c. chopped dried apricots
1/4 c. cider vinegar
2 minced chipotle peppers for a hot sauce, or to taste
Sauté vegetables in a little oil in large saucepan, until they begin to caramelize.
Add rest of ingredients, tasting for seasoning as you go. Allow sauce to simmer
slowly for taste to develop, adding a little water if necessary.
